  1. Wash the spinach and let it drain.
  2. Heat a little oil in a pan, and add the chopped onion, garlic, sambal oelek, and galangal powder. Fry until the onions are soft and slightly yellow.
  3. Add the spinach in small handfuls, stir-frying briefly to keep it bright green and crispy.
  4. Crumble in the stock cube and stir in the sweet soy sauce.
  5. Serve immediately before the spinach wilts too much.
