Ingredients

Salad

  • 1 oz fresh arugula
  • 1 cooked beet, cubed
  • 1 oz feta, cubed
  • 1/2 tbsp parsley, roughly chopped

Balsamic Dressing

  • 3 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/3 cup extra virgin olive oil
  • Salt and pepper, to taste

Instructions

For the Salad

  1. Place the fresh arugula in a large bowl.
  2. Slice the cooked beet and place it on top of the arugula.
  3. Add the feta cubes.
  4. Sprinkle with parsley and drizzle with balsamic vinegar dressing.
  5. Serve immediately.

For the Balsamic Dressing

  1. In a small bowl or jar, combine balsamic vinegar, honey, and Dijon mustard.
  2. Slowly drizzle in olive oil while whisking to emulsify the dressing.
