This chocolate marshmallow fudge recipe is easy to make and requires no baking. Regular marshmallows are turned into delicious treats combined with melted chocolate. Perfect for satisfying your sweet tooth!

An 8x8 baking tray will make 32 rectangular or 64 small square marshmallow bite-sized treats.

Ingredients

  • 5 tablespoons butter, chopped (70 g)
  • 1 cup dark chocolate chips (or roughly chopped dark chocolate) (150 g)
  • 4 cups marshmallows (250 g)
  • 1 teaspoon vanilla extract
  • 2 ounces white chocolate, melted (50 g)

Instructions

  1. Line a square baking pan (8×8 inches) with parchment paper, leaving an overhang for easy removal. Lightly grease the parchment paper to prevent sticking.
  2. Combine thebutter and dark chocolate in a heatproof bowl. Melt them together over a double boiler (a bowl set over a pot of simmering water) or in the microwave in short bursts (15–20 seconds at a time, stirring after each burst) until smooth and fully combined.
  3. Add the marshmallows to the melted chocolate mixture. Stir continuously over low heat (if using a stovetop) or heat in short bursts in the microwave, stirring between bursts, until the marshmallows melt completely and the mixture is smooth.
  4. Stir in the vanilla extract.
  5. Pour the melted mixture into the prepared pan. Let it cool slightly, then transfer to the refrigerator to set for 3-4 hours, preferably overnight, until firm.
  6. Once the mixture has set, drizzle the melted white chocolate over the top using a fork or piping bag for a decorative finish. Let the white chocolate harden before cutting.
  7. Use the parchment overhang to lift the set mixture from the pan. Cut into squares or rectangles with a sharp knife.
    Tip: Lightly grease your knife with oil to prevent sticking when cutting the squares.

Notes

Any leftovers can be kept in an airtight container in the fridge for up to 1 week or in a freezer-safe bag in the freezer for up to 2 months. Thaw in the fridge overnight.
