This Mint Lime Salad Dressing is a quick, fresh mix of lime juice, mint, vinegar, honey, and olive oil. Make it when you want something simple to give your salads that extra flavor without much effort. Shake it up right before dinner or make a batch for the week.
This recipe uses just one lime, making a small batch of the lime and mint dressing. Perfect for one or two salads and easy to scale up.

I love this dressing on green salads, grilled chicken, and fruit salads with melon or berries. It also works well as a quick drizzle over roasted vegetables.
How to Make Mint Lime Salad Dressing
All you do is whisk or shake the ingredients together until the honey dissolves and the mint is mixed in. I like to start with the lime juice, vinegar, water, honey, and oil, then stir in the chopped mint at the end. You can adjust the lime, oil, or honey the way you like.
Shake the dressing well before every use because the oil will separate. If the honey settles at the bottom, re-whisk or warm the jar for 10 seconds.
You can call this a mojito vinaigrette because of the lime and mint combination. The dressing itself is non-alcoholic, but if you want a bit more punch, you could, of course, stir in a tiny splash of rum.

Mint Lime Salad Dressing (Small Batch)
A small, fresh batch of lime and mint dressing that uses just one lime. Perfect for one or two salads and easy to scale up.
This salad dressing fits vegetarian, dairy-free, and gluten-free diets.
Ingredients
- 3 tbsp fresh lime juice (from 1 lime)
- 2 tsp lime zest
- ¼ cup vinegar (white vinegar or apple cider vinegar)
- 2 tbsp water
- 3 tsp honey
- 2 tbsp olive oil
- 2 tbsp fresh mint, chopped
Instructions
- Add the lime juice, lime zest, vinegar, water, and honey to a small bowl or jar. Whisk or shake until the honey dissolves.
- Add the olive oil and whisk until the dressing comes together.
- Stir in the chopped mint.
- Taste and adjust the honey or lime if you like it sweeter or more tart.
- Store in the fridge and shake well before using.
Notes
Store the dressing in a sealed jar in the fridge for up to5 days. The mint will darken slightly but stays flavorful.
Freezing is not recommended because the herbs will turn mushy and the texture will separate.

Customization Options
You can make the flavor stronger by adding more lime zest or more mint. If you want a creamier dressing, whisk in 2 or 3 tbsp mayonnaise or Greek yogurt. For a sweeter version, add another teaspoon of honey. You can also switch the vinegar to rice vinegar for a softer flavor.
I also like to use lime and mint in baking, like in my lime mint sugar cookies, where the same flavors come together in a sweet way.
