While Es Timun Serut typically doesn’t include citrus, this version adds a lemony twist for a fusion of familiar and tropical flavors.

How to Make Cucumber Lemonade with Pandan Syrup
Making this drink is very simple. First, you’ll make a syrup by dissolving sugar in water and infusing it with pandan extract for its signature fragrance and color. While the syrup cools, grate a cucumber and squeeze fresh lemon juice. Combine the ingredients in a pitcher, dilute with water to taste, and serve over ice for the perfect summer drink.

Customization Options
- Substitute pandan with vanilla extract. (the lemonade won’t be so green!)

Cucumber Pandan Lemonade
This easy Cucumber Pandan Lemonade combines the crisp taste of cucumber, the fragrant aroma of pandan, and the tangy kick of fresh lemon juice. Make a batch in minutes!
Ingredients
- 1/2 cucumber
- 1 cup sugar
- 1 cup water
- 1/2 tsp pandan extract
- 1/2 cup freshly squeezed lemon juice
- Cold water, as needed
- Ice cubes
Instructions
- In a saucepan, combine sugar and 1 cup of water. Heat over medium heat, stirring until the sugar dissolves. Bring this simple syrup to a gentle boil, then remove from heat. Stir in the pandan extract and let the syrup cool completely
- Wash the cucumber thoroughly and grate it using the large holes of a box grater.
- In a pitcher, combine the grated cucumber, cooled pandan syrup, and lemon juice. Stir well. Add cold water to dilute to taste, usually about 2–3 cups depending on how strong you want the flavors.
- Pour into glasses, add ice cubes, and serve.
Notes
Refrigerate any leftover lemonade in a sealed container for up to 3 days. Stir before serving as the ingredients may separate.
