Garlic mushrooms are a simple skillet dish made with champignons, fresh garlic, olive oil, and dried herbs. They cook quickly, use everyday ingredients, and deliver a lot of flavor with very little effort.
This dish comes together in one pan in about 15 minutes. This is the kind of recipe you make on a busy evening or when you need an easy side that works with almost anything.

These mushrooms work well as a side dish with meat, fish, or eggs. They’re also good spooned over toast, stirred through pasta, on a skewer, or served with crusty bread to soak up the oil and juices. They are delicious hot straight from the pan or at room temperature.
How to Make Garlic Mushrooms
Slice and cook the mushrooms in olive oil until they release their moisture and start to brown. Add garlic, herbs, salt, pepper, and optional chili flakes near the end so the garlic stays fragrant and doesn’t burn. A good garlic press makes quick work of the fresh garlic and gives an even texture. The dish comes together in one pan in about 15 minutes.
You can adjust the herb mix, and add more or less garlic or chili flakes.

- Salt, to taste
- Black pepper, to taste
- Pinch of chili flakes (optional)
Instructions
- Heat the olive oil in a wide skillet over medium-high heat.
- Add the mushrooms and cook for 6–8 minutes, stirring occasionally, until they release moisture and start to brown.
- Lower the heat slightly and add the garlic, herbs, salt, pepper, and chili flakes if using.
- Cook for 1–2 minutes, stirring, until the garlic smells fragrant.
- Remove from heat and serve warm.
Notes
You can cook the mushrooms ahead of time and store them in the fridge for up to 3 days in a sealed container. Reheat gently in a skillet over medium heat or briefly in the microwave. Freezing is not recommended, as the mushrooms lose texture.
