Indonesian Chicken Spring Rolls

Ingredients
- 16 spring roll pastry wrappers
- 1 tbsp oil
- 2 chopped green onions (scallions)
- 1 clove garlic, minced
- ½ cup bean sprouts, washed and cleaned
- 1 tbsp finely chopped leek
- 3 tbsp finely chopped cabbage
- 1 ½ cups cooked chicken, shredded
- 2 tsp parsley, chopped
- 1 beaten egg
- 1 tbsp soy sauce
- ¼ tsp ground ginger
- ¼ tsp ground cumin (jinten)
- ¼ tsp ground coriander (ketumbar)
- ½ tsp chili paste (sambal oelek)
- Salt to taste
- Oil for frying
Instructions
- Lay out the wrappers and let them fully thaw.
- Stir-fry the green onions in a tablespoon of oil until translucent, then add garlic.
- Add bean sprouts, leek, and cabbage, and cook for 1 minute. Add the shredded chicken and mix well. Remove from heat and stir in parsley.
- In a separate bowl, whisk together 2 tablespoons of beaten egg, soy
sauce, ginger, cumin, coriander, and sambal chili paste. Pour this
mixture over the chicken filling and mix thoroughly. Season with salt. - Let the filling cool completely, then divide it onto the wrappers.
- Brush the edges with egg, fold, and seal. Let rest for 10 minutes.
- Heat oil and fry the spring rolls in batches until golden brown. Drain on paper towels.

- Fry the rolls in batches to avoid overcrowding the pan, which can reduce the oil temperature and affect crispiness.
- Make sure the filling is fully cooled before wrapping the spring rolls to prevent the wrappers from becoming soggy.
