Serve these roast beef bites as part of an appetizer platter for a high tea party, holiday meal, or cocktail hour. They pair well with other finger foods such as cheese, crackers, olives, and other small sandwiches.

How to Make Mini Roast Beef Sandwich Bites

Start by mixing softened cream cheese with prepared horseradish to make a simple spread. Cut small rounds from soft white sandwich bread. A small round cookie cutter makes it easy to cut uniform bread rounds for these appetizer bites.

Then top each one with the horseradish spread and a few small arugula leaves. Add thinly sliced roast beef and finish with a small piece of cornichon.

You can adjust the amount of horseradish to make the spread milder or stronger. If you prefer, you can use a different small pickle or add a little fresh ground black pepper.
