How to Make Cranberry Apple Turnovers

The turnovers start with a quick stovetop filling made by simmering cranberries, grated apple, sugar, and cinnamon until thickened. The filling is placed on puff pastry sheets, folded, and sealed before baking.

You can make the turnovers smaller and serve them as fun party snacks. Cut the square puff pastry sheets into four equal smaller squares and fold those into mini turnovers. Bake them for about 10 minutes.

Ingredients

  • 1 sheet puff pastry, thawed and cut into 6 squares
  • 1 cup fresh or frozen cranberries
  • 1 medium apple, peeled and grated
  • 3 tablespoons sugar
  • 2 teaspoons cinnamon
  • 1 egg yolk (for egg wash)
  • 1 teaspoon water (for egg wash)
  • Optional: 1/2 cup powdered sugar and 2 tablespoons milk or water for icing

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Roll the puff pastry lightly on a floured surface if needed. Cut into 6 equal squares.
  3. In a small saucepan, combine cranberries, grated apple, sugar, and cinnamon. Bring to a low boil and simmer for 7–10 minutes, until the cranberries break down and the mixture thickens.
  4. Remove from heat and let cool completely.
  5. Place the cooled filling on one side of each puff pastry square. Brush the edges with water, fold into a triangle, and press the edges with a fork to seal.
  6. Mix the egg yolk with water and brush over the pastries. Sprinkle with a little sugar if desired.
  7. Bake for 25 minutes or until the turnovers are golden brown.
  8. Let the turnovers cool before serving. For extra sweetness, drizzle with icing made from powdered sugar and milk or water, and allow to set.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 5–7 minutes until warmed through.
These turnovers can also be frozen for up to 2 months. Reheat directly from frozen in the oven at 375°F for 10–12 minutes.
